Vegan Keto Bowl

Ingredients
- 2 c. kale chopped
- 4-5 cherry tomatoes quartered
- 3 Tbsp. Pumpkin Seeds (toasted & lightly salted)
- 2 Radishes, julienned
- 2 c. Cauliflower (Riced)
- 2 Tbsp coconut oil
- 1-2 tsp cumin
- 1 tsp pink himalayan salt
Simple Lemon Vinaigrette for topping:
- 1 Tbsp Fresh Lemon Juice
- 2 Tbsp Extra Virgin Olive Oil
- 1/2 tsp dijon mustard
- 5 Stevia Drops
- Salt & Pepper to Taste
- A little grated lemon zest
- Pinch of Crushed Red Pepper Flakes (optional : if you like the heat!)

Directions:
- Saute the cauliflower rice with coconut oil, cumin, & salt for 5-10 minutes until softened but not mushy
- Prep the rest of the veggies for the bowl
- Put the rice (still warm) in a bowl & add the rest of the veggies in
Drizzle the Lemon Vinaigrette on top & enjoy!
Tip : Add Some Sliced Avocado for Extra Fats!
