Beef & Spinach Meatballs with Garlic Aioli

Ingredients

Meatballs:

  • 1 pound ground beef (grass fed)
  • 1 cup spinach
  • 1 egg
  • 1 Tbsp garlic powder
  • 1tsp Sea Salt
  • 1 Tbsp Italian Seasoning
  • 1/4 c. chopped red onion
  • 2 Tbsp chives

Aioli:

  • 1/2 cup Avocado Mayo
  • 1tsp sea salt
  • 2 tsp garlic powder
  • 1tsp chopped parsley

Directions:

  1. Mix together beef, egg, garlic, seasoning, chives and onions.
  2. Roll into meatballs.
  3. Place on cookie sheet and bake in a preheated oven at 425.
  4. Cook 35 minutes.
  5. Meanwhile, prepare the aioli by mixing all ingredients together.
  6. Once meatballs are done, immediately transfer to a bowl or saucepan, and gently cover with aioli.
