Roasted Veggies

Servings: 6

Ingredients

  • 1 zucchini
  • 1 yellow squash
  • 1 red bell pepper
  • 1/2 onion
  • 1 c butternut squash
  • 1 tbsp oregano
  • 1 tsp basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 tbsp olive oil (or fat of choice)

Directions:

  1. Preheat the oven to 400℉.
  2. Chop all veggies (similar in size)
  3. Toss together the chopped veggies, olive oil, herbs, and seasonings until all vegetables are well coated in oil and seasoning.
  4. Spread the veggies into an even layer on a foil lined baking sheet. Salt and pepper to taste.
  5. Let your vegetables roast for 30 minutes then flip them all over & and roast until they reach your desired doneness.
  6. Enjoy!
