Pumpkinless Pumpkin Spice Cookies

Serving size: Recipe makes 20 cookies


  1. Preheat oven to 350 F & grease a cookie sheet
  2. Beat three eggs until frothy
  3. Stir in the monk fruit sweetener & the coconut flour
  4. Add the remaining ingredients and stir until blended & smooth consistency
  5. Fold in optional add ins
  6. Scoop the dough with a mini ice-cream scoop or a spoon into 20 even cookies
  7. Bake for 12-15 minutes until edges turn golden
  8. Enjoy!

For the Frosting / Drizzle


Optional “Frosting”

  • 2 Tbsp Coconut Butter Melted down
  • 2 Tbsp Cashew Butter
  • 10 drops vanilla creme stevia drops (or sweeten to your liking!)


  1. Melt down coconut butter & stir in cashew butter
  2.  Add stevia drops to your desired sweetness
  3. Top the Cookies when you take them out of the oven & give them a few minutes to set
