Pumpkinless Pumpkin Spice Cookies
Serving size: Recipe makes 20 cookies
Ingredients:
- 3 Eggs
- 1/3 c Coconut Flour
- 1/2 c. Monkfruit Sweetener
- 1/2 c. Pecan Butter
- 1/2 c. Coconut Butter (melted down!)
- 1/2 c. Cashew Butter
- 2 tsp maple extract
- 1/4 tsp pink himalayan sea salt
- 2 tsp pumpkin spice
- Optional Add ins:
Salted Pumpkin Seeds
Lily’s Chocolate Chips

Directions:
- Preheat oven to 350 F & grease a cookie sheet
- Beat three eggs until frothy
- Stir in the monk fruit sweetener & the coconut flour
- Add the remaining ingredients and stir until blended & smooth consistency
- Fold in optional add ins
- Scoop the dough with a mini ice-cream scoop or a spoon into 20 even cookies
- Bake for 12-15 minutes until edges turn golden
- Enjoy!
For the Frosting / Drizzle
Ingredients:
Optional “Frosting”
- 2 Tbsp Coconut Butter Melted down
- 2 Tbsp Cashew Butter
- 10 drops vanilla creme stevia drops (or sweeten to your liking!)
Directions:
- Melt down coconut butter & stir in cashew butter
- Add stevia drops to your desired sweetness
- Top the Cookies when you take them out of the oven & give them a few minutes to set
