Keto Rhubarb Muffins

Makes 12 muffins

Ingredients

  • 2 Cups Almond Flour
  • 1 Cup Heavy Whipping Cream
  • 2 Large Eggs
  • 1/4 Cup melted Butter
  • 3 Tbs melted Coconut Oil
  • 5-10 drops liquid Stevia
  • 1 tsp Baking Powder
  • 1 Cup chopped Rhubarb
  • 2 tsp Cinnamon

Directions:

  1. Preheat oven to 350
  2. Melt butter and coconut oil
  3. Whisk eggs together with cinnamon
  4. Add all other ingredients into the mixing bowl with eggs and mix until well combined
  5. Pour muffins into 12 silicone baking cups or greased muffin tin.  Sprinkle with additional cinnamon
  6. Bake for 25-30 minutes (until golden brown and a toothpick comes out clean)
