Keto Rhubarb Muffins
Makes 12 muffins
Ingredients
- 2 Cups Almond Flour
- 1 Cup Heavy Whipping Cream
- 2 Large Eggs
- 1/4 Cup melted Butter
- 3 Tbs melted Coconut Oil
- 5-10 drops liquid Stevia
- 1 tsp Baking Powder
- 1 Cup chopped Rhubarb
- 2 tsp Cinnamon

Directions:
- Preheat oven to 350
- Melt butter and coconut oil
- Whisk eggs together with cinnamon
- Add all other ingredients into the mixing bowl with eggs and mix until well combined
- Pour muffins into 12 silicone baking cups or greased muffin tin. Sprinkle with additional cinnamon
- Bake for 25-30 minutes (until golden brown and a toothpick comes out clean)
