Keto Buffalo Chicken Soup

Ingredients
- 12 oz cream cheese
- 2/3 c. low carb buffalo sauce
- 1 c. heavy whipping cream
- 8 cups chicken broth
- 1/2 c. chopped celery
- 6 tbsp. butter
- 1 whole rotisserie chicken (or 4c. chopped, cooked chicken)
- 1/2 tsp. garlic powder
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- parsley flakes, to garnish

Directions:
1. Using one tbsp. of the butter, saute the chopped celery until it starts to get tender. Set aside.
2. Using a blender or food processor, combine broth, cream cheese, buffalo sauce, heavy cream, and butter. Pulse until smooth.
3. Pour into a soup pot and heat on medium until simmering, but not boiling. Add remaining ingredients, including sauteed celery. Turn to low and simmer for 10 minutes, stirring occasionally.
4. Top with parsley flakes, if desired, before serving.
