Keto English Muffin in a Mug
- Spray a large ramekin or shallow bowl with non-stick spray. Add the butter and almond butter and microwave for 30 seconds. Stir until smooth and set aside.
- In a small bowl, combine all dry ingredients. Then, add the beaten egg and mix well.
- Add the flour mixture to the butters and carefully mix. Wipe away any batter that splashes up the sides.
- Microwave for 2 minutes.
- Allow to cool slightly. Slice in half and toast. (Make sure your toaster is on the light setting and check often if you don’t like dark toast).
- Enjoy with your favorite keto-friendly toppings !!
