Keto English Muffin in a Mug

  1. Spray a large ramekin or shallow bowl with non-stick spray.  Add the butter and almond butter and microwave for 30 seconds.  Stir until smooth and set aside.
  2. In a small bowl, combine all dry ingredients.  Then, add the beaten egg and mix well.
  3. Add the flour mixture to the butters and carefully mix.  Wipe away any batter that splashes up the sides.
  4. Microwave for 2 minutes.
  5. Allow to cool slightly.  Slice in half and toast.  (Make sure your toaster is on the light setting and check often if you don’t like dark toast).
  6. Enjoy with your favorite keto-friendly toppings !!
