Dairy Free Chia Seed Pudding
Ingredients
- 6 Tbsp chia seeds
- 2 cups unsweetened vanilla pea milk or almond milk (or whatever keto friendly milk you like best)
- 1/2 tsp pure vanilla extract
- 5 Drops of Vanilla Stevia (or sweeten to your liking)
- Additonal toppings (optional) Strawberries, raspberries, blueberries, blackberries, sliced almonds, chopped walnuts, or any other chopped nuts of your choice

Directions:
- Combine all ingredients (except the toppings)
- Let sit for 5 minutes, and then stir again to break up any clumps of chia seeds
- Refridgerate for 1-2 hours to let it “set-up” (Or overnight is even better!)
- When ready to serve, divide the mixture between two cups or bowls, top the chia pudding with berries & nuts. If it is too thick, add more of your milk of choice until it reaches your desired texture!
