Dairy Free Chia Seed Pudding

Ingredients

  • Tbsp chia seeds
  • cups unsweetened vanilla pea milk or almond milk (or whatever keto friendly milk you like best) 
  • 1/2 tsp pure vanilla extract
  • 5 Drops of Vanilla Stevia (or sweeten to your liking) 
  • Additonal toppings (optional) Strawberries, raspberries, blueberries, blackberries, sliced almonds, chopped walnuts, or any other chopped nuts of your choice

Directions:

  1. Combine all ingredients (except the toppings)
  2. Let sit for 5 minutes, and then stir again to break up any clumps of chia seeds
  3. Refridgerate for 1-2 hours to let it “set-up” (Or overnight is even better!)
  4. When ready to serve, divide the mixture between two cups or bowls, top the chia pudding with berries & nuts. If it is too thick, add more of your milk of choice until it reaches your desired texture!
  5. Enjoy!
