Chorizo Omelette

Ingredients

  • 2 Large Eggs
  • 1 Tbsp Heavy Whipping Cream
  • 2 oz of Chorizo
  • 1/4 c Cheddar Cheese, Shredded
  • 1 green onion – chopped
  • 2 Tbsp Salsa (no sugar added!) for topping (optional)
  • 1/4 Avocado sliced – for topping (optional)
  • Salt & Pepper to Taste

Directions:

  1. Precook Chorizo first
  2. In a medium bowl, whisk eggs, heavy whipping cream, and chopped green onion.
  3. Pour mixture into non-stick skillet at low to medium heat
  4. Cook the first side of the omelette & flip
  5. Sprinkle Cheese on the other and then cook evenly
  6. Put chorizo in the middle of the omelette & flip over
  7. Plate the omelette and top with salsa & avocado
  8. Additional Optional Toppings: Sour Cream, onions, cilantro, more chorizo.
