Chorizo Omelette
Ingredients
- 2 Large Eggs
- 1 Tbsp Heavy Whipping Cream
- 2 oz of Chorizo
- 1/4 c Cheddar Cheese, Shredded
- 1 green onion – chopped
- 2 Tbsp Salsa (no sugar added!) for topping (optional)
- 1/4 Avocado sliced – for topping (optional)
- Salt & Pepper to Taste

Directions:
- Precook Chorizo first
- In a medium bowl, whisk eggs, heavy whipping cream, and chopped green onion.
- Pour mixture into non-stick skillet at low to medium heat
- Cook the first side of the omelette & flip
- Sprinkle Cheese on the other and then cook evenly
- Put chorizo in the middle of the omelette & flip over
- Plate the omelette and top with salsa & avocado
- Additional Optional Toppings: Sour Cream, onions, cilantro, more chorizo.
