Blueberry Cheesecake Mousse

Ingredients:

  • 2 Tbsp Unsalted Butter (softened – not melted)
  • 2/3 c Cream Cheese (softened – not melted)
  • 6 Tbsp Heavy Whipping Cream
  • 3/4 c Blueberries
  • 1 tsp. Pure Vanilla Extract
  • 3  1/2Tbls. Confectioner Swerve
  • 1/4 c crushed walnuts and extra blueberries for topping (optional)
Keto friendly cheesecake mousse in glass jars with blueberries sitting on top.

Directions:

  1. Mix together butter, cream cheese, vanilla & sweetener
  2. In separate bowl, beat whipping cream with hand mixer for 2 minutes or until stiff peaks are formed.
  3. Add butter mixture to whipping cream and beat on low for 3 minutes.
  4. Lightly crush blueberries and add to the mix.
  5. Spoon even amounts into 3 glasses and chill for at least 30 min.
  6. Enjoy !!
