Basic Cauliflower Rice


  • 1 head of cauliflower , cut into small chunks
  • 2 tbsp butter
  • 1 green onion, sliced thin (optional)
  • 1/2 tsp of garlic powder
  • salt and pepper to taste


  1. Pulse cauliflower chunks in a food processor until it has a “rice-like” consistency.
  2. Melt ghee (or fat of choice) in a large skillet and add riced cauliflower.  Season with garlic powder, salt and pepper.
  3. Cook on medium and saute or stir the cauliflower for approximately 8 minutes, until it starts to golden.
  4. Fold in the green onions if desired.
  5. Enjoy!
