Bacon & Egg Cups

Ingredients
- 10 Large Eggs
- 2 Tbsp Heavy Whipping Cream
- 1 1/2 c cheese
- 1 tsp sea salt
- 1 c spinach – rough chopped
- 8 slices of bacon – pre cooked & chopped
- 2 green onions, chopped

Directions:
- Preheat Oven to 375
- Grease 12 muffin tins
- Whisk together eggs, cream & 1 c of cheese
- Stir in spinach, precooked & chopped bacon, green onion, and salt
- Pour mixture evenly into 12 muffin tins
- (Should only fill about 2/3 of the way up – they will rise up when baking)
- Top with remaining 1/2 c of cheese
- Bake for 15-20 min or until edges begin to get golden
- Let cool & enjoy!
