Bacon & Egg Cups

Servings: 12

Ingredients

  • 10 Large Eggs
  • 2 Tbsp Heavy Whipping Cream
  • 1 1/2 c cheese
  • 1 tsp sea salt
  • 1 c spinach – rough chopped
  • 8 slices of bacon – pre cooked & chopped
  • 2 green onions, chopped

Directions:

  1. Preheat Oven to 375
  2. Grease 12 muffin tins
  3. Whisk together eggs, cream & 1 c of cheese
  4. Stir in spinach, precooked & chopped bacon, green onion, and salt
  5. Pour mixture evenly into 12 muffin tins
  6. (Should only fill about 2/3 of the way up – they will rise up when baking)
  7. Top with remaining 1/2 c of cheese
  8. Bake for 15-20 min or until edges begin to get golden
  9. Let cool & enjoy!
